Grilled Yellowtail with Peruvian Barbecue Sauce
Ingredients (1 serving)
- A fillet of yellowtail 80 g (2.8 oz)
- Salt and pepper as needed
(Peruvian-style Barbecue Sauce [Easier to make 2 to 3 servings at a time])
- Less than 1 cup parsley, chopped
- 1/6 to 1/8 onion, finely chopped (30 g: 1 oz)
- 50 ml (1.7 fl oz) olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic, minced
- 1/2 teaspoon cayenne hot pepper powder
- Salt as needed
(Accompaniments)
- Fried potatoes
How to cook
1. Make the sauce. Mix all ingredients together.
2. Season yellowtail with salt and pepper and grill on both sides.
3. Arrange the yellowtail and fried potatoes on a plate, serve with the sauce.
